The Gorosei are not immortal.
I believe that only Imu has the immortality Surgery.
There is another explanation for the fact that their human bodies do not age.
NORO PHOTONS
An awakened Noro Noro no Mi user or Imu himself might have the power to manipulate Noro Photons and modify the bodies of the Gorosei to make them live for centuries aging much slower than humans.
Gorosei are not immortal. They only age slower because of Noro Photons.
Some of the Gorosei have been replaced during Imu's reign.
I bet on two:
Saturn, problably replaced one Gorosei killed by the giant Robot that attacked Marijoa.
Ju Peter, the Sand Wyrm, probably replaced another Wyrm Gorosei slayed by Ryuma, the Wyrmslayer.
As history repeats itself in One Piece, Kuma will be the one striking the finish blow to Saturn and Zoro will be the one to kill Ju Peter
