Let's wait few more chapters to figure out what's going on. For all we know, Saturn can do this to Zoro as well, who knows?
Also, you're never going to convince anyone taking the "wings" thing literally to powerscale. They are mirror of dudes having Zoro and Luffy equal.
As far as powerscaling is concerned, Zoro is ambiguously somewhere between Luffy and Sanji, this ambiguity is by design for Oda to do stuff and not care about powerscaling. On average, Zoro is probably in the middle of Luffy and Sanji (like he's 7.5 is Luffy is 10 and Sanji is 5).

I’m not jumping the gun. This is very consistent with Sanji. The problem is that Oda will use Sanji as a hype tool and he doesn’t get proper redemption. If he does it to Zoro or Luffy you know they are going to show out right after.
This happened with Vergo and Doffy. My problem isn’t Sanji it’s Odas use of him.
Contrary to popular belief I don’t hate Sanji. But it’s hard to respect his strength when he constantly gets used like this.
Look at it like this, if Luffy gets fucked up by someone he will find a way to defeat said imdividual. It happened with Kaido, it happened with Croc it happens all the time. Same with Zoro, i.e Mr. 1. We can even use Kuma as an example Zoro stood no chance and still ended up looking like a monster in the end. So when they lose it’s fine but Sanji doesn’t get the same courtesy from the author. People pretend that they don’t see it.

Sanji didn't break Niji jaw only dislocated it. After Niji fixed his jaw, the damage Niji took vanished. Katakuri nameless punch drew blood from Ichiji. You cannot say explosion did the damage because in the anime after the explosion there's no blood from Ichiji's nose and lip. It's only after nameless punch from Katakuri that we saw blood on Ichiji's nose and lip. Unlike Niji whose damage vanished after he fixed his jaw, Ichiji was till bruised some time later after wedding cake was destroyed by tamatebako Box. WCI Sanji was weaker than Daifuku who was below Snack who was lost to Urouge.
