The signs are a direct reference to images made out in the stars . . .

The "CELESTIALS" are obsessed with stars, and the cosmos.

Even the Moon



Not surprising since the chapter in which the Gorosei was introduced, Clover had this.



So if there is a theme for the Holy Knights, it should be an extension of the cosmos.
Why astrology specifically?



There are a dozen celestials representing the Holy Knights standing guard at the podium at God Valley. There is also a 13th person above who may or may not be their supreme commander.

This actually makes sense when you consider the total number of families for the Celestial Dragons

20 families
-Nerona
-Saturn
-Venus
-Ju Peter
-Mercury
-Mars
-Nefarti
=13

12 if you remove the Donquiote family.

It is the Knights' responsibility to handle the internal affairs of the Celestials. So it makes sense for each family to have a representative.



At times these members may compete for the glory of their house (See above "Trophy to the Manmaiya Family").

SUMMARY

God Knights are made up of reps from each major family left over after the Gorosei, Imu, and Nefarti. In fitting with the large theme of the cosmos for the celestial dragons, the 12 Knights will have symbology referencing the Western Zodiac (Astrology).
