It might not actually be called "God" Valley. It might be "Go D." Valley.
"Go" could actually have a few meanings in Japanese. But the two I'm most familiar with are the Japanese word for the number 5, and the board game Go (as in Hikaru no Go).
So..."5 D" Valley, for 5 D-Clan Families, or the "fifth dimension" (or maybe the First World was REALLY into Yu-Gi-Oh)? Maybe Oda's just making a joke about playing 5-D chess with the audience?
Or maybe "God" Valley is where the First World held it's own type of "games". Oda does love his parallels. It's possible something similar to the Celestial Dragon's Native Hunting Tournament was held thousands of years ago right on God Valley. Maybe the “Gods” were playing games of their own in the distant past.
Go, the board game, also gets it's name from "Igo" which means "to surround". So..."Surround D" Valley. Maybe it's where the D-Clan was trapped and almost wiped out? Maybe that's why there's this little colony of D-Clan members here? They're the survivors of the original planned ambush?
But, barring something like that, I think the most likely source for it's name would probably be that the Ancient Weapons were originally built on God Valley. The Ancient Weapons are all named after planets, which share their names with Greek/Roman Gods. At the very least, some key material or component for making the Ancient Weapons work may come from God Valley. Although, different materials from all around the world are likely needed to construct them. Seastone from Wano, silicon from Alabasta, gold from Hachinosu, that sort of thing.
I wouldn't be surprised if God Valley had something to do with the terraforming of the planet, if that's a direction Oda ends up going in. We know that parts of this planet have been artificially altered in the past, we just don't know how much. I think it's possible this entire planet has been transformed using advanced technology. Maybe one of the first spots terraformed and transformed to be made suitable for human life on the planet? Because being able to transform a entire planet to suit your whims, would kind of make you a "god", even if it was just a advanced human society that did that.
But, from what we've heard so far, Elbaph really should be the very first land that got "terraformed", if anyplace actually did. That's the "birthplace of war", so it would make since if Elbaph was key spot. Maybe God Valley was where the leaders of the First World called home? Maybe God Valley was basically their "Olympus"?
But, there's also the giant cleave in the mountain to consider.
It's possible that it's from a attack. Maybe two of the Gods battled over something in the past. Maybe that's were Nika had his falling out with the Sea God or something.
But, it's worth pointing out that the mountain on God Valley actually resembles a real world location in Japan. Dawn & Dusk actually pointed out in a recent video that God Valley actually resembles the Sado Mine.

So, it's entirely possible that the mountain on God Valley looks like that because of mining in the past splitting the mountain because they dug too deep too quickly. Not because of some big battle. That DOES kind of line up with other mining operations we've seen around the world, like the Amber Lead in Flevance. Whenever people dig too deeply into the earth, they get punished for it.
So maybe the island is actually named for what they were mining? Maybe they were "mining"...GODS! Or...basically the equivalent thereof.
We've seen the artificial Devil Fruits called SMILES get created before. And that requires a "primordial ooze" that is SAD, which gets added to trees to create SMILE Fruits. Now, supposedly, there could be a naturally occurring substance that does the same thing with Devil Fruits. Some sort of naturally occurring "primordial ooze" that exists in the center of the planet? Some sort of "Dream Energy" that allows Devil Fruits to be created.
If "SMILE" Fruits come from "SAD"...then maybe "Devil" Fruits come from "Gods"? Each coming from it's "opposite"? This could be some form of the "Forbidden Sun" mentioned in the Chapter 1138 Mural.
Maybe the substance that God Valley was mining was literally the stuff that dreams are made of...
So, I don't know, there's a lot of possibilities. Oda could go a lot of ways with this. I don't think we have enough clues to really say anything definitive, yet.
As far as Davy D Jones goes...I wouldn't be surprised if he's Joyboy. But, I also wouldn't be surprised if he isn't.
If you forced me to pick a side...I guess I'm leaning towards the idea that Davy D Jones is actually a separate character.
Mostly because, if Oda has a chance to create ONE character that does TWO things, or TWO characters who each do ONE thing in the story...Oda picks two characters 90% of the time. Oda LOVES maximizing the number of characters in the story. Supposedly, creating new character designs is one of his favorite parts of doing this manga. So, if he gets to make TWO character designs instead of just one? He's going to pick the option that adds more characters into the story. That's just more his style.
I wouldn't put too much stock in the stories we've heard about Davy Jones. If Rocks proves anything, it's that sometimes stories become slanted in the telling in this world. No story is completely true...but no story is completely false. Davy Jones probably wasn't that bad of a guy, but he probably wasn't a saint, either. Just like Rocks.
As far as we know, there's no story about Joyboy getting exiled to the bottom of the sea. "Joyboy" isn't even that well known in this world. Only people who have studied history in some way know about him. But, everyone seems to know about Davy Jones. That alone makes me think they're most likely two separate characters.
Again, though, we really don't have enough to go on, here. It's possible it could go either way.
