Couldn't decide on any order, but chronologically:

Sasuke retrieval arc
All of Naruto part I is amazing, so it was hard picking a favorite. Zabuza fight, Chuunin exams, Konoha invasion, Itachi's after-invasion, Sannin face-off, all feel super nostalgic and are objectively great. Sasuke retrieval arc is simply the peak of that greatness, and stands kind of representative for all of part I. In retrospect, part I felt generally more cohesive, and less divided into single arcs.
The arc had many interesting abilities and some of the best fights (Neji vs. Kidomaru, Kimimaro vs. everyone). Here, the worldbuilding and Shinobi mechanics established throughout part I could fully unfold. The progress of the arc felt pretty unpredictable, and while the outcome was clear, it was a landmark in Naruto's plot.

Gaara rescue arc
Had the excitement of being the first Shippuuden arc. It did a great job introducing some of the characters' progress, reigniting the fascination for Itachi and establishing the mystery of the Akatsuki. Chiyo's whole character was extremely well written, and contributed to a great conclusion. The sadness and emotion it sparked are to me only rivalled by Zabuza-Haku-death. Also, Chiyo & Sakura vs. Sasori was one of the series' best fights period. In retrospect, it also improved the world building by being the first arc to explore & expand the lore of another village, which made the plot feel grander than just Konoha.

Itachi vs. Sasuke arc
To me, this and Itachi pursuit feel kind of like the same arc. This, to me, was the peak of Shippuuden storytelling, when the plot felt like it had the most "direction". Itachi vs. Sasuke was the fight with the most hype throughout the entire series. This arc also introduced another landmark with the Itachi-truth-reveal, and established Madara/Tobi as an exciting and mysterious villain. By the time the anime was at this arc was also when I got into Naruto online forums, so this arc will always mark the time I was most invested in Naruto, lol.

Least favorite, everything after the Kage summit.

(Also, reading my reply, it's funny that the major landmarks that changed the direction of Naruto's plot were all related to Sasuke rather than Naruto, lol)

Sasuke hard carried major parts of the story tbh.
