Presumably through Traumerei's memories that Leviathan told him about. Gustang's memories shouldn't have anything to do with this part of the flashback in particular.
nope, Traumiri did not know what Enkido did with Amuez (Enkido showing Amuez the lab), the only person who knew about it was Enkido and Amuez (if Traumiri knew, he would've killed/punished Enkido, which he never did)

I get what you mean, but by process of elimination, the only way Baam knows about this is through what Leviathan told him.

It shouldn't be a memory of Traumerei. Maybe Leviathan was on the lab at that point, and saw this event unfold. If he's one of the 3 Sea Dragons, you can argue he was born there (there's a panel of Traumerei with the eggs of his dragons; the background looks very similar to this lab).

Leviathan/test subjects shouldn't have known though exactly what happened between Amuez and Enkido to have led them to the lab

Not at that point, that's for sure. But if Leviathan later on got Traumerei's memories, he would've known about Traumerei/Enkidu/Ameuz relationships in more detail, which could perhaps have allowed him to connect the dots.

It's also possible it's just a plot hole though.
