I think In Character, he was actually a bit scared that Usopp was a resident of that village, and thus he would need to keep to his word and completely destroy it. Something that he really didn't want to do since it would weaken his control over Nami.

But yeah; considering how subtle and roundabout the cause of Arlong's sweat clearly was, somebody breaking out in a nervous sweat very clearly isn't an indication of strength much of the time.
