Imu just appeared on Elbaf, by taken over the body of a Holy Knight. Did he do the same on God Valley? Did he possess Garling or another Holy Knight back then? Were Garp and Roger given credit for something Imu actually did? I mean, defeating Rocks.

That could very well be the case.
Seeing how IMU currently wants Vivi, it could be that he can only possess someone either fulfilling certain criteria (from a specific lineage), or someone who's been prepared for some time to be able to endure the possession without the vessel getting destroyed.
IMO, IMU has various assistant-maids all prepped for possession, and Gunko is the best of them in terms of fitting IMU's personality/demands.

I think the eye changes automatically once the possession is successful.

the pills that hody and the rest took were called the national treasure of fishman island. they give you great strength but accelerate aging. imu was called national treasure of maryjoa by doflamingo. so i think possesson ages people rapidly. thus, sugar would be a suitable vessel. she isn't in impeldown. i think she was brought to pangea castle. it was wise of doffy to hide her.
