You can put this into perspective and say... What happens if they touch a building at the same time (Doflamingo once turned buildings into string)? Does their abilities cause it to explode? You can't overturn someone's devil fruit ability
If Luffy turns it into rubber then Doffy needs to make another house into string and fight it.
Basically same as Kuzan v Akainu's half half situation until someone overpowers the other with stamina or haki or maybe a superior ability.
