This right here. Sanji by himself is a very good mover but he can't block neither Hakai nor Boro Breath or Prometheus. Thus rendering him useless on the Roof. He can't scar Kaido or penetrate his scales.
A tank like Jinbei on the other hand could block at least Prometheus and perhaps Boro Breath with water, add to that his sturdy body. But he lacks mobility unfortunately.
Zoro is inbetween them regarding mobility and sturdiness.
Sanji on the Roof would perhaps be able to move like Killer and be equally strategical but without being able to damage Kaido from within like Killer could nor take Big Moms Indra attack as well as Killer. All in all Sanji would be a second rate Killer.

What I said was that expecting Sanji to block something in mid air and not getting sent flying is like expecting Zoro to stop lightning in mid air.
