Katakuri as a villain lacked something both doffy and crocodile have but kata is still a fan favourite, so what do you think oda got right with kata as a character.
Arlong, Crocodile, Enel, Lucci, Doflamingo & Kaidou were truly evil characters.

Katakuri was someone who was protecting his Family and wasn't a bad guy in the sense for Luffy to defeat.
He was an obstacle for Luffy to surpass.

Katakuri's cool demeanor and sense of duty to his family, coupled with being the only competent person in WCI (besides Perospero, the true GOAT of that arc). The mystery factor of having previously unknown levels of haki helped pull people too. I remember the intro for this guy, everyone immediately put him above Doffy off that alone.

But the fact he was able to kick Luffy around so easily, mimicking his styles and had a surprising amount of range beneath the cool exterior of a perfect officer pretty much solidified him as a fan favorite. Coming to respect the MC and trade blows with him for three chapters? Arguably winning the final clash but choosing to lose? Having a strong sense of honor?

Yeah, it's easy to see why people like Katakuri. Toss in the deeper symbolisms of him fighting Luffy in the mirror world and those two being a reflection of each other and it's a dead ringer.

Cool design, honor, pride, respectable guy, a good and creative devil fruit, the potential of him leading a powerful yonko crew, first guy in the timeskip to force Luffy to grow in a fight. He’s not the deepest character but he was cool and interesting and no one saw him coming as wci began, for many he was the most enjoyable part.
