Those Thai dishes with peanut butter noodles are amazing!
Unique foods for me are probably the following:
Trinidad doubles which are spicy, yet sweet and delicious.
Stuffed Grape leaves, I think from Lebanon. They are a bit sour but very good.
Fried Plantains which are from the Caribbean's.
