Crock was at the entrance to the grand line,Ray was lurking around the entrance of the new world,so i assume Gaban is somewhere around lodestar or whatever island is the exit of the new world.

Gaban doesn't seem to be a very important character, not to mention sanji isn't special enough to deserve training from a member of the pk crew. Oda made that pretty clear when he just had sanji practice cooking and run away from a bunch of crossdressers for all of timeskip. Honestly if he hadn't been on the only island in the world without a single woman he would have never gotten any training done.

still,skywalk+casual diable jamble+hell memories+coo and coa is not bad for a guy that had to train by himself pretty much.
