Burgess vs Franky could also work, but Jinbe does seem like the most likely opponent for Burgess.
Lafitte(in his first post time skip appearance, he was introduced standing next to Shiryu, Zoro's opponent), or Pizarro(Both Sanji and Pizarro are former North Blue royalty and Pizarro is known as the "Corrupt King".

Sanji fights the 10th Titanic Captain. The mystery guy (or girl).
Luffy vs BB: Obvious. BB is the anti-Luffy
Zoro vs Shiryu: Obvious. Zoro is an honorable samurai while Shiryu is a dishonorable swordsman who sneaks up on his opponents from the back.
Nami vs Lafitte: Navigators. Noble burglar vs corrupt cop
Usopp vs Van Augur: Both snipers
Sanji vs 10th Titanic Captain: Simply because none of the others have been portrayed as BB’s left wing.
Chopper vs Doc Q: Doctors. Chopper is a good doctor, while Doc Q gives his patients explosive apples
Yamato vs Devon: Mythical dogs. One has an identity crisis, and the other can be literally whoever she wants to be
Jinbe vs Burgess: Helmsmen. Serious martial artist be fake wrestler
Robin, Franky, and Brook vs Wolf, Pizarro, and Shot: No strong connections yet, unfortunately.

I think Wolf, so far, makes the most sense for Robin. Robin is the most well-equipped to fight a giant opponent since she can just make a giant version of her self. Also, Robin was sent to Tequila Wolf, which is very similar in name to San Juan Wolf. Obviously, both have Wolf in their names, and “Tequila” and “San Juan” are both Spanish. Coincidentally, Robin names her attacks in Spanish…

Vasco Shot looks like a jester, he'll fight the guy that is always making jokes—Brook
Robin gets either Devon or someone else.

Screw Bugress, give him to Chopper or Franky or some shit. Both Jinbei and Sanji deserves better match-up

Both of them got special introductions so they’re going to be taken out by one of Luffys most notable man.
Burgess is a mixed martial artist and has that slightly goofier design. And he was introduced and continued to show signs of being Blackbeard’s right hand man and most trusted ally. As such Jinbe doesn’t deserve to fight someone like that as Jinbe doesn’t share anywhere’s near that level of importance to the straw hats or Luffy.
Lafitte on the other hand is an infiltrator able to sneak into mariejoa and into a heavily guarded meeting with no one noticing. Not even the man known as “hawk eyes.” Not to mention he’s known as the chief of staff he has a high ranking level in the crew and upon reintroduction was shown alongside Shiryu. Plus if Sanji is indeed related to a winged race like Lafitte may be as well then this is likely a shoe in.
