Because as a Swordman he needs to fight and overcome all obstacles.

For story purposes if he only fought swordmen then he would be detached from Power Scaling in General.

Exactly. And his fight with Kaido is the result of all this fighting/learning throughout the series. Which shows us how he and Luffy are different since they both tested their mettle against Kaido at the same time.
