I don’t think Akainu give a shit who Sabo is. His real beef is with Dragon, he wanted to kill Luffy just to get back at him because they have a history with each other.

So, Akainu vs Dragon makes more sense since it would show flashbacks of their younger days (maybe close marine friends) and what caused him to behave like that.

I don’t want to see the same Luffy gimmick shit against him while screaming Ace’s name.

When Luffys ability is the more he laughs the stronger he is, there’s no way he’s fighting anyone with a frown.

The one I want Akainu fighting would be Dragon.

Luffy G5 is something I don't want to see against Dragon, even though there is good buildup for a Luffy vs Akainu. Akainu is amongst the only characters to scar Luffy, both in body and mind. Luffy's scar aches at the mention of Akainu.

Sabo........I simply don't see Sabo becoming Akainu level. He has a weaker DF than Akainu, and doesn't have conqueror's haki, Plus, there is zero buildup to that. I don't want Akainu to lose to discount Ace, that's disrespectful in my personal opinion.

Back in Marineford, Akainu was fixated on Luffy because he was "Dragon's son".
Akainu kept referring to Luffy as such for all of the arc.
This does suggest that Akainu hates Dragon for some reason or another, plus this by itself is at least somewhat of a buildup to Dragon vs Akainu.
