Vergo’s story is better than Katakuri’s
We know Katakuri has covered up his face in an attempt to protect his siblings, ýet the years went by, the siblings became older and capable of actually defending themselves, (so much so that WCI defencess have "not wavered" for many decades) but the vestige of the past that is Katakuri’s scarf still remained. He started developing facial insecurities and as a 48 year old man he is still walking around with a diaper covering his chin because, that's about as much self respect as he has at age 48. At 48 years old guy he clearly needs a caseworker to work out basic things like “own who you are” have basic confidence and courage. Katakuri has walked around his entire adult life with a diaper over his chin because he is a peoples pleaser that wants you to like him, and does everything to try to gain your approval. He has started false rumours about his supposed invincibility and supported fanclubs around his false hype, supported by literal inbreds of his own family. Katakuri's entire life has revolved around what a bunch of inbred ugly ass looking people think of him.
Katakuri doesn’t even have the courage to leave WCI. Katakuri is a prisoner of his own mind and geographically because he is not allowed to leave, and he lacks the courage to even try if he had the option to. Katakuri is a scared human being
Vergo also has crippling conditions, like false memory and food that keeps get stuck on his left chin. If there was ever the reason to develop facial and interpersonal insecurities and mess with your self-esteem, these two reasons would've surely been it. But there is a vital differnce that seperates someone like Vergo and Katakuri and these are things Katakuri sorely lacks: courage, confidence and self respect.
Vergo who was born as a germa soldier and had the courage to something Katakuri doesn’t ever truly dare: escape bondage and make a life for himself before the age of 10.
Katakuri needed the boost of a 19 year old erratic kid to teach him some basic manhood
Vergo's personality is better than Katakuri's.
Katakuri is the guy who cares so much about gaining your approval it’s actually borderline sick. He also sexually molests his siccophant 15 year old sister Flampe, but we know he does it with the lights off.
Katakuri is a guy that eats donouts in private because he is a coward and obsessed about people not liking him. When Flampe saw his face she got disgusted with him. She rejected him fully and wanted nothing to do with him anymore. That's the difference!
Vergo is a guy that everyone looked up to as a father and respected, because Vergo actually possesses true leadership qualities, courage and confidence. Vergo is a guy that is sociable and likes to take his coffee and cookie breaks together with his DD family members (see big family dinners) and girlfriend Monet, who eagerly services her man.

Vergo is a funny guy that's loyal, hardworking, has deep respect from his subordinates and he has got self respect that Katakuri completely lacks. He has an unyielding fighting spirit and undomitable will to conquer and dominate. You will inexorably fold and buckle under the heat and pressure, but Vergo will never ever stop until he wins. Vergo is truly undaunted

Quite unlike what a harpy woman colloquially stands for, Monet is the exact opposite: a humble, kind and servicable woman to Vergo in every way shape and form. While Katauri's facial insecurities and cowardice has restrictied his life and dating options severely, and as incest doesn't make it as a notch count in my book at least, that's all Karakuri has got. Vergo is specialist in the art of rokushiki, he has a bamboo and uses it for QCQ and as a blowgun which he is very adept with. He dominated Sanji using only kicks when he is shown to be a general martial artist with lots of various skills, and still he got the complete better of Sanji who is a specialist in just using kicks. Imagine what would happen a silat fighter completely shat on a Muay Thai fighter and broke his leg? Maybe you don't know much about fighting but I can tell you it'd be the biggest thing that would have ever happened in fighting history. That's what happened between Vergo and Sanji.
He outspeeded Law's shambles and could easily intercept him with his incredible speed. He can literally fly using geppo and used it to stop Law in time before he could destroy the SAD factory. Vergo's fitness level is so insane he can fight Smoker after Counter Shock and still do massive collateral damage with his blowgun
Vergo is never portrayed as having loss of breath and being fatigued which Katakuri is repeatedly because his stamina really is that trash
His true CoA mastery required Law to slice up an entire island to beat him, that consisted of actual mountain ranges (same island where the famous battle between the admirals took place)
Katakuri is subpar, can't hit Luffy once with his mogura and was not able to hit him once without using special COO to see where he is going. He has an ok fruit with good mastery of it. But he needed 11 hours to try to defeat Luffy and failed. Sanji knocked out Luffy from 11 hits, most of which were half assed. Vergo could already create hotter flames than Sanji and completely shat on him.

Vergo going in for attack, seemingly with the left leg, then just to mess with Sanji’s head he switches leg and attacks with the right
This makes sense anatomically (you know there is a thing called hip that would need to rotate for that stance to even be possible in the first place) but you need just look at the contour and shape of the foot. It is the right leg
Losing momentum not just from switching leg but also because he bends the leg in a 90 degree angle
And of course he uses the ankle to attack and Sanji checks high so as to have a strong defence, versus Vergo using a poor attacking stance and the weakest part of his leg to attack. Instead Sanji breaks
