Because she spends most of her fighting screentime chasing blindly after the protagonists, is really big, is really greedy (thus is a type of pig), is surprisingly smart (pigs are actually dog levels of IQ) and is much stronger than her size would imply.

Black Beard is supposedly a hippo.
Shanks is maybe a fox, though honestly, we don't have enough info to really decide.
