It’s unclear how exactly these people are seemingly conscious while asleep or knocked out but the only pattern I can find is that they are CoC users so I assume it’s got to do with CoC.

Nah, Zoro was already waiting somthing. There was a battle in the same island 1 chapter ago, by Luffy.

Kaku also literally shouts the name of his attack Amane Dachi, which also creates big shockwaves as well as sounds, even a non-CoO Haki user might woke up before it happens. While Ace was sneak attacking WB without trying to make any noise, these are not even comparable.

Sleep and knocked out are different. It's easier to rouse from sleep than it is knocked out, because knocked out is stress on the body and needing to fight unconsciousness and the bodies attempt to heal.

Me wanting Sanji to have CoC has nothing to do with Zoro. It's because it completes his self-worth character arc, makes him the only conqueror worthy in a family of conquerors that aren't conquerors, thus being poetic justice, you ignoramus. Not everything is about powescaling it's what makes a good story.
