Zoro
As we know from the latest chapter, Shanks has Future Sight. If Shanks and Mihawk have the same powerlevel, Shanks will win most of the time because he has FS. But they're shown as dueling buddies.
Which means either Mihawk is a speed type swordsman like Brook (less likely), or he also has FS to fight evenly with Shanks (more likely).
Zoro will defeat Mihawk, and with this we can safely say that, either Zoro will have FS, or he has a mean in countering/bypassing FS.
One of those is most likely to happen especially since Oda loves to give Zoro some anti-sanji abilities (fire cutting, pierce tough defense, and maybe invisibility counter).
Sanji
By design, Sanji will never have advanced CoA (Barrier and Internal Destruction), because Haki is only 1/3 of his skillset and all of it will go to CoO department (his specialty).
However he will be the Wings. To respect PK title, his CoA wouldn't be too bad. So at least he will gain full mastery of the basic CoA (Hardening), which is full-body armament.
This will most likely to happen because it's highly possible that we will see Hell Memories with Ifrit fire. Ifrit requires Hardening, and Hell Memories covers all of his body.
