If Zoro's sword actually did eat the Azure Dragon fruit, then it would be behaving similarly to Shamrock's Sword. It's not just an Azure Dragon, it's an Azure Dragon Sword. It's properties would include the Sword parts and possibly use them for abilities. Since it's a flying creature, it wouldn't have to use fancy tactics like exploding its heads off just to fly. Also, suddenly, Zoro doesn't have to be slow or find someone to help him launch for attacks. He could let the dragon transport him and help him navigate fights in the air or at a distance.
