I don't know how to define the name of your role. But whoever reads and interprets one piece in the most basic and simple way possible, will know that Sanji is a great proactive agent of the crew, he is the balance and the heart of the group, he usually takes the responsibilities of the gruop for himself, he mostly of your actions is saving, advising and leading your fellow crew members.
I would say that his role is more like Luffy's first mate, while Zoro is vice-captain, he has all the traits for that.
