Defeating a calamity makes you more important and more helpful in a war then being unable to land a blow on Kaido.
Yamato didn’t do anything to Sasaki, and she hasn’t done anything to Kaido yet. So no, she’s not been more relevant than Sanji.
Even Franky and Robin have contributed more to the war effort than Yamato. Hit me up when Yamato actually defeats someone this arc.

So what happens if sanji were to stall Kaido.

1) No one else at the time could have stalled kaido. luffy and zoro were out of the battle. Basically yamato is the only one that is capable of the feat 1 v 1. Kaido could have ended the war if yamato didn't intervene. When you think of the importance of a feat, you think of what happens if it fails. If Sanji fails to beat Queen, there are so many YC level tiers that can stall him until zoro gets back to full heal. Zoro can easily defeat queen. And I can even argue that multiple scabbards (denjuro + kawa) can possibly beat him too. On the flip side, notice the difference. If yamato fails to stall Kaido, its game over for the alliance.
