I remember Jozu (ice wave) and Jimbei (magma punch) both getting taken out by single no-named attacks from admirals and Law running for his life from one.

I also remember base Luffy enduring 12 hours of named attacks from Katakuri.

Lotta ifs, katakuri lost to a Luffy who was still learning future sight and when Luffy finally did get a hang of it he finished the fight within an hour. He lost to a Luffy with a section of his stomach gone within an hour. Katakuri was going even with that Luffy who later went on to fight Kaido and he got one shot after doing zero damage. Kinemon and all the scabbards did more damage to kaido than Luffy.

Basic CoC is literally useless against non-fodder.

Devil fruit awakening is a non-factor here since the mochi fruit is shite and without awakening would be THE worst commander fruit without it.

Luffy didn't get that bounty from his Katakuri fight alone. Reread the part where Big News Morgan's said he defeated the big mom pirates. He got that big of a bounty because of his potential as the fifth emperor of the sea. Katakuri was definitely a factor in why Luffys bounty shot up, but he wasn't the entire thing.
