Sanji is a complex character, may not be likeable or "well written" but he is developed, Oda is connected to sanji's character, he likes to put sanji through mental hurdles to get him through them, he's only behind Luffy in terms of development, the other straw hats aren't even getting half the attention sanji's getting.
