Zoro is more trusting in Sanji's strength than fearing King's strength, and more excited about their hypothetical duel.
King and Queen are 5% difference in portrayal and Sanji quickly finished him off with Ifrit, saying King would "destroy" Sanji is a clownish take, King is not Kaido.
Luffy and Sanji beat Kata and Queen by plot. And King was a YC disguised as something above that. And so it feels like Zoro beat a downgraded King. And even though Sanji had plot save him from Queen, he ended up surpassing him by far anyways. Luffy was the only one who was still weaker than his opponent by the time the fight ended.

I feel that King's look doesn't fit Oda's art style at all, i mean it's great and i like it but it feels unOda like.
100% King has CoC and if he doesn't show it this chapter, either he is not defeated or he and Queen get up with awakening.
If you are trying to hype King above Kaido, and creating hypothetical proof that I need to provide to counter your narrative then you have issues.

Read the spoilers. His fire helps him take all these defense, but I understand it's hard that to swallow for you zoro fanboy as his opponent needs to be perfect in everyway without flaws
The more King increases his speed, the less he has durability. So it balances to the point where someone like sanji who is SUPER FAST and with AP capable of defeating Brachio ancient zoan YC2 (tankiest ancient zoan) can beat him if took him offguard/outspeeding him, sanji doesn't lose his durability and regen when he moves fast also.
Also want to point out that futur sight is king's biggest counter since you can predict when the fire will be on/off, that's why the Katakuri would be a bad matchup for king
