Also while we're at it, why would Shanks know and the Gorosei who hold the secrets of the world don't ?

The nika fruit doesn't just give you the ability to stretch, as we're seeing. He becomes a "fun" character
Maybe all the gorousei really thought that luffy's fruit was rubber, and shanks went there to tell them that the fruit he ate was actually the one he stole years before
