It still was not a full 1 vs 1. It has been stated many times that Kaido was getting weaker each time, everyone he fought took away some HP. So that fist of Luffy wouldnt K.O him at the begining

People need to start and understand that Luffy returned from the time skip with the set of skills and power to stall top tiers already. He already was equal or stronger than Katakuri with no PU. An Admiral at Dresrossa acknowledged he had to power to fight an Admiral. In wano he might not have been able to defeat an Emperor, but with his PU could have extreme diff battles with them.
