He's a forest logia, he sprouts forests from the ground. Logia are intangible, the moment your body is broken/shattered/unable to function, like Apoo cutting Kizaru/Cannons against Akainu/Luffy shattering Aokiji, they reform.

Same thing with greenbull, against a fire attack where he didn't protect himself the very body he was working with was burnt, he cannot function with it anymore so he withdrew and came back with a normal functioning one.

What does his INTANGIBILITY have to do with the fact that an amateur based version of Bolo breath blew away his forbidding forest and vines/monster form away? Did he suffer a significant injury? no Was his attack blown away? yes

According to Yamato who has tried to kill Kaido multiple times in the past, Momo mastered the dragon form like Kaido. Dragon being the strongest zoan this boro breath isn't to be taken lightly. Gb didn't due his anti fire tech, as you said Oda showing off Momo, but also wants to show off Gb's cool ability.
