I don't think the anime knows how physics works.
The anime has the shockwave bouncing off the direction the sword ends up in.
The manga has the shockwave bounce off where the sword slashed from to show the force of deflecting off of Sanji's jaw.
Also, is this a Peregrine Falcon? Aka fastest raptor of the sky. Interesting choice for our speed monster.
