What do Sanji fans actually gain from downplaying Mihawk? I thought portrayal showed that Zoro and Sanji are close in strenght so wouldn’t it be good for him if Zoro defeats someone stronger than Saint Shanks?

but I hope you recognize you are that this particular line you have drawn is the same one someone say like erkan would draw.
cause you have infact now separated sword styles/skill from other very important aspects of one's strength . haki most notably which by far seems to be the biggest factor.

The narration here is different. Luffy did lose. The wording for the narration for Kid seems to be "complete defeat" or "annihilation" because its clearly a riff on what happened to Luffy in Sabaody
