The only minks we've seen in Zou are mammals.

There isn't any reason why there can't be Bird/Reptile/Insect minks.

In the latest chapter 1083 Karasu was shown to be a logia user of the Soot Soot fruit. But he looks like a crow and shapes his element in the shape of crows too. He might be a Bird mink!
