The point is that he'll at least beat members how both groups and that they are narratively HIS opponent and not Zoro's or Sanji's.
Luffy was the first character to beat a Shichibukai 1v1, the first character to beat a Yonko 1v1 and you're telling me this won't carry over to the final major group of villains which we've never seen lose a fight in 1089 chapters?

If I'm not mistaken I know you have some bias against the Admirals, now let's ignore the bias and think realistically here.
Do you actually think Oda who btw is already a huge Luffy fan himself, will actually have someone like Zoro or even both Zoro and Sanji defeat an Admiral before Luffy?
This arc is the perfect opportunity for Oda to show us how strong Luffy is compared to an Admiral now, Oda isn't going to ignore that opportunity.
Also right now there is no proof that Saturn is stronger than Kizaru other than people just guessing.
Btw if Kizaru doesn't get defeated by the end of Egghead, then I do think there is a slight chance that Zoro might fight him by the end of the series.
