I would say that the 3 missing races are: Lunarian, Bucaneer and Oni
Luffy/Nika = Bucaneer
Zoro = Oni
Sanji = Lunarian

Yeah Luffy can literally become a giant so I’d say he’s closer to a buccaneer than Zoro.
