Same reason Kizaru and Saturn don't just off Vegapunk.
Saturn and Vegapunk were standing in front of Vegapunk and neither of them did anything to him… Sanji and crew LEFT VEGAPUNK alone in front of them to “escort Bonney to a place she already knows and can reach on her own”and Sanji is running back to fight Saturn and Kizaru and is very sure neither of them has killed Vegapunk in that time he ran away to do nothing… And he’s right, Both Kizaru and Saturn has left vegapunk alive and well in the middle of the battlefield
