I get that there is still a chance for Sanji vs Laffitte, but so far the idea of Pudding being hidden so well that only Pizarro can take care of her fits it way better than Laffitte being the one who watches her. We already saw how Pizarro can tell what people are doing at different spots of the island, and that he could've easily take care of it as Shyriu and Pizarro himself pointed out

Imo I think you need to consider why pudding was taken, we’re told she may be able to read the poneglyphs. As such; the person who’ll be most connected to that on the BBP is the person who needs to make a map based on the locations of the poneglyphs, Lafitte. Combine that with his past as a sheriff known for his brutality towards prisoners, it’s easy to assume the state Pudding will be in.
I think that’s a bit more fitting and Odas style than Sanji running through some island labyrinth.
