Then Kaido has been fighting Luffy for hours non-stop and after he resurrects he CANNOT IDENTIFY Luffy’s haki… he literally looks right at Luffy doing all that shit and cannot identify him anymore

So how come Kaido is an expert at identifying haki when it comes to Oden and the scabbards and Enma, but suddenly he’s an unreliable narrator when it comes to Luffy?

This is dumb, Kaido was shown crying before going in Drunk mode, he was shown bloodlusted before too. He was drunk so of course Luffy wont question his change of behaviour because he saw him get shitraced.
