Mihawk had confidence to insult Shanks in front of his crew. If everyone jumped, Mihawk isn't dumb enough to not be able to deal with that.

He probably has some of the best Observation in the verse so I don't see him getting sneaked by mere high tiers like that, he'd just have to get a bit serious for a moment and pull out a move similar to Divine Departure to eliminate them immediately

No it did not.
Shanks was looking down upon Higuma and refusing to attack.

Shanks and Mihawk had active duels and Shanks was all smug challenging Mihawk, the guy he once had strength to compete with. And in response the guy he challenges insults him and calls him too weak to compete.

And Shanks knowing his strength and Mihawk's strength has no response because he knows that he indeed is one armed has been who stands no chance and would get stomped if he fought Mihawk.
