I really hold Doffy in high esteem but Jinbei is a fellow Shichibukai and has feats for days, so neither Doffy nor Gunko should dominate him. The guy is basically at 75 % on land but still held off Akainu, defeated Moriah, got hits in on Big Mom and mid diffed Who's Who. He deserves every single berry of his 1.1B bounty. He is also very experienced and has yet to be overwhelmed by a unknown DF.

With that being said, of course the HKs need further hype and probably will get some but realistically I can't see Gunko > Jinbei in any shape or form.

It just shows how clueless Oda was about what to do with her and how to make Wano arc. The arc was such a gigantic mess.

She always should have come back during Elbaf, leaving more room for Kaido and his crew (alongside less Oden, Scabbards and Wano side characters).

I don't think she is going to out right beat them. Probably disable the Ship while kidnapping Colon to nerf Scopper cause he going after the other God knights.
