Based off what we see this chapter, I'm inclined towards King v Sanji just being a clash. The hit that Sanji seems like it could be enough to momentarily keep him down, then King thinks he's done for and then gets occupied with something else.

He doesn't need to use his sword to be serious. It's like saying takuri needs to use his trident to be serious. King is more than just a simple swordsman.
