Kaido expressing his desire to fight Roger definitely hints that such an encounter might have actually taken place. It feels like clear foreshadowing for God’s Valley, and Oda wouldn’t include that line in chapter 1096 for no reason.
Since Kaido also holds Roger in such high regard, it makes perfect sense for them to have clashed at least once. Of course it could go no where but let’s see. His added durability from this fruit might also be the reason for surviving an encounter, hence Linlin talking about saving his life.

Author constantly trying to one-up himself every arc by introducing newer + stronger + more evil opponents for """more hype and aura""" at the cost of the story being bloated and inconsistent
I remember defending Garp back at Marineford for sticking with the WG and not siding with his pirate kids, now I can't imagine doing that again in big 2025 when this dude knows about Imu (literally Satan), Celestial's hunting game (literally genocide) and still chooses to work for them 38 years later

I'd argue that for the most part the mochi fruit even grants stronger techs and attacks.
Oda scaled down the physical strength increase from hybrid transformations down that much, that it would barely give Katakuri anything besides its great durability and the dragon form as it is.
It's a good fruit for someone, who already has a top tier fighting style like aCoA+CoC hakiblasts or CoC infused swordsmanship, but other than that - besides flame dragon torch - it's really not op.
It's essentially just a better dinosaur fruit with a durability threshold that doesn't even bother top tier attacks in the slightest.
Add that a whole lot came from Kaido in the first place: Oni strength and toughness, top tier CoC, TB speed, drunk CoC increase..
Put it on a guy like DR base Luffy or base Kid and you know how strong it is on a normal guy.
Base Kaido himself is just that powerful.

There's a difference between erasing a country that broke the world's law, killing the son of the most wanted pirate, and having a human hunt competition for fun.
The former two have a reason, the latter is just for pleasure and hedonism.
