Not gonna lie with the kinda hype Davy Jones is getting, Teach legit has a strong chance of being the final antagonist of the series as the weight of his character has now extended past the PK title & now tied into Imu/Void Century lore. In which case, Teach’s crew is gonna have to get some major upgrades coz right now they ain’t cutting it as final antagonists for the SHs. So I do wonder how Oda’s gonna go about achieving this especially given he’s gone the more pragmatic approach with their DFs rather than giving each of them OP fruits on paper.
Why not? As long as Luffy's not there, Sanji will be the most important character around, along with Zoro. If he received a lot of focus that led to character development in Wano, I don't see why it can't happen in Elbaf. And if it somehow helps the plot move forward, anyone can receive a lot of focus.
I agree with your second point, Sanji overcoming DR seems frankly unlikely, but there are still things we don't understand about how DR works. And there's this idea of a mysterious power that we call PoL, which could be a game changer. It's not even impossible to see Rocks eventually overcoming PoL, maybe thanks to his love for his wife and son.

I say him specifically because to be quite honest he and Teach are the only ones I'm really certain of in terms of who they'll fight and how strong they'll be EoS

It would be pretty par for the course in OP. Think about how many characters (even those with massive buildups) had to watch their dreams be accomplished by Luffy rather than their own hand.
Teach will be defeated but Davys promise will be fulfilled by Luffy. Just like how Laws dream was fulfilled by Luffy in Dressrosa, Wypers in Skypeia, Momos in Wano, Vivis in Alabasta, and so forth.
Expecting any side character to kill Imu is like expecting a side character to beat a saga villain.

Luffy and Teach, despite going both against Imu's idea of controlling the world, are opposite sides of a coin.
Teach apparently wants to control it himself.
Luffy doesn't want to control.
So, there 2 will have to clash for the One Piece, due to the fact that, once the One Piece is claimed, the whole world will enter a huge war (that will culminate with the fight against Imu).
So that's why I believe It's Luffy vs Teach for the One Piece, then the war against Imu.

Also, Rayleigh said they learned about the Void Century during their travels. So, despite finding the OP, they weren't able to claim it. So we might find the Rio Poneglyph before the OP.
