Ironically, I think you're the one forgetting that. Oda establishes his own rules in his fantasy world and he made it clear that being able to physically deflect lasers with your body is more unique and harder to explain than a swordsman simply using a swordsman technique and cutting fire or water. I'm not the one making the distinction, Oda used his characters to make that distinction himself. You're essentially comparing apples and oranges on the pretext they're equally impossible feats irl.
