Haku gave up because he got overpowered by Naruto. Kakashi wouldn’t lose to Part 1 Naruto who is merely just flaring some Kyuubi chakra and not even manifesting a tail. It’s a pretty clear cut case of early series inconsistency. Either Haku being stronger than Kakashi was retconned, or Naruto should have been drawn manifesting 1 or 2 tails, but didn’t because Kishimoto hadn’t thought of it yet
Haku being weaker than Naruto is headcanon, besides immediately getting overpowered in cqc(which isn't his signature fighting style). We're literally told by Zabuza that Haku's heart was breaking as he fought Naruto, he's essentially the first villain in the series to connect with Naruto, etc....

No, Zabuza is just more well known, Haku is a nobody in universe. Zabuza himself believes that Haku would be too much to deal with for a Kakashi who beat him.

Kabuto should be stronger than anyone at the Chunin exams by a good amount, but I don't think he could do like 1v10 against Gaara and others(obviously I mean part 1 Kabuto)

2. They were nir scared of zabuza because he was more famous. They were scared because if his killing intent, mist and his swords deadlines while in the mist.
3. Zabuza was glazing his potential actually. He stated that haku was more SKILLED than he was. Because of his Keke genki and because of his fighting potential at his age. Zabuza has never canonically stated that Haku was stronger. Just that he was more skilled (kekei genki)
4. Based on feats alone he is above Haku. He has more chakra. More destructive jutsus. More durable. When both Haku and zabuza were blood lusted (because of kabuto) in the war arc, Haku was not more impressive than zabuza lol. Zabuza literally most of the cousins in that area in check.
