He was remembering the people who in his own experience deserve respect and he fought them and whose presence he saw in Luffy.

It not like luffy not fight with a huge stab wound already VS kat .

Also this chapter is another reason why you shouldn't really take fights at face value and also take context and the narrative into consideration coz Oda's writing is heavily biased towards what he's trying to hype up at the time.
In the vs. HK Harald fight Gaban and Shanks were somewhat restricted by the plot coz Loki's Devil Fruit gas was the main event.
In the vs. Imu fight, now we see what Gaban can really do without plot shackling him and he actually cooked Imu who is much stronger than HK Harald for a bit even if he ultimately came up short.
