This isn't necessarily a powerscaling question. It's more of a question regarding the mechanics of the story. And specifically, I want to show durability basically doesn't make much sense in this story anymore.
First of all, let's address the "real physics" arguments. In "real physics" diamond isn't that hard. Seriously, it's the hardest substance but that doesn't mean it's unbreakable (despite Jojo part 4). In fact A LOT of the casual physical strength abilities in this story can already break "real" diamond. For example the amount of force Luffy used to break out of those two buildings he was stuck in Water Seven. If Luffy used that amount force in a punch, he'd break diamond. Of course the harder thing to do is cutting diamond. Diamond has higher durability to cutting but then again, diamonds are cut in real life already so cuts like the one Zoro did to Pica is potentially thousands or millions of times stronger than what's required to cut diamond.
But of course Jozu is tougher than All the above. We shall have to say Jozu's diamond is "Mystic diamond" kind of like Luffy is "Mystic rubber" since Luffy has extremely exaggerated rubber properties.
So secondly, we have to address what Haki can do here. Or specifically Advanced Haki. Or Specifically Kiku piercing Kaido. This situations brings up the question of whether Kaido has more durability than Diamond Jozu. Or maybe Kaido has a DIFFERENT kind of durability than Jozu on which different properties apply. Either way, Haki seems to be the ultimate nullifier of all here. Which ever the actual explanation is, it's begs the question can Kiku cut Diamond Jozu?
Yes. If Jozu has weaker Haki than her. This seems to be the final answer. That at some point, everything is based on Haki in the end and Mr Jozu's durability only matters to stuff like bombs exploding in his face or whatever else type of damage that doesn't carry Haki. Of course this doesn't mean Kiku has more Haki than Kaido and that's why she cut him, Kaido is seemingly perpetually drunk and seems to barely want to defend himself with Haki even if he can.
Therefore if the situation was similar, Jozu is in full diamond form but is caught unaware or gets speed blitzed before he can Haki up, Kiku could just cut clean through him.
