Human zoan users will just have normal human children. As far as we currently know, devil fruit users in general cannot pass on any traits from their devil fruit onto their offspring. Linlin for example has many children but none of them have any powers similar to the Soul Fruit. 
So no nightmare fuel here.
However, the above should also apply to Chopper who is at his core, a reindeer and not a human. Chopper may not even be able to produce offspring with humans (but he could with regular reindeer?
).
If he can reproduce with humans though...
His children will be abominations.

also what if a zoan user mates with their animal while in zoan form
Hes barely ever in his human form or full Zoan form.
Hes always in his hybrid form...Anyways its a matter of attaction. If he was in his human form hed still be attracted to Reindeers....because hes a Reindeer at heart.
No it doesnt depend. Chopper wouldnt get atttacted to humans. Have you ever caught him ever simping for Nami or Robin ? Nope.
He only simps for minks or reindeers. He wont have sex with a human.
