What is your point? Controlling Enma is not the be all and end all of haki or even fighting capability. If his speed increased significantly from age 9 to 25 then would he not be many times stronger? What about physical strength? Or other types of haki like CotC or CoO?
Hmm the more I think about it the more I think taming Enma is related to either affinity or intimidation rather than haki control. Someone like Kinemon who knows Ryou shouldn't be that afraid of Enma and taming it since he knows how to use and manipulate haki.

You can dodge Katakuri with basic CoO, depending on the move. If it's a finisher or long range attack like jellybean or Mochi Drill, basic CoO will allow you to perform a last second dodge.
However, that's just Katakuri's slower moves. When it came to his punches they were MUCH harder to dodge. Luffy ate most of those attacks.

You're comparing Katakuri's attack speed from long range to Sanji's reaction speed. Very different things. Sanji doesn't need Future Sight to know that something is about to hit him.
Anyhow, look at the Apoo scene where Luffy tells Sanji to cover his ears. Proof that Sanji has no Future Sight.

I just posted the panels of luffy dodging a serious katakuri before future sight. Sanji did not use future sight katakuri literally threw something at him. You don’t need future sight to dodge bullets. Gotti from Capone crew Also dodged the jellybeans . Stop embarrassing yourself
