There's no build-up. All the build-up was gone as soon as Zoro trained under Mihawk. How is Zoro vs. Mihawk, in any way, going to be this huge climactic battle at the end of the series when we know the Straw Hats are going to fight Blackbeard, the Admirals, and the WG illuminati? There's literally no stakes to the fight even if Mihawk gets wanked to oblivion.
I don't think Shiryu is going to kill Mihawk, but I sincerely doubt at this point Mihawk is going to be Zoro's final battle (or even a battle).

If you mean emotional stakes between two fighters that have a conflict of ideals, I agree. However, that doesn't mean a climactic fight can't happen with different kind of stakes. It'd be about excellence of swordsmanship. Zoro and Mihawk basically paying respect to the beauty and artistry of their life's dedication. I think it could be amazing.
And it doesn't have to be in the final war per se. Who knows how the epilogue will be set up. OP will have a huge epilogue. Maybe SHs finish their journey, Zoro is world renowned for being Luffy's right hand man. Then he challenges Mihawk for #1 swordsman title.
I mean I'm just thinking in writing here, but just saying there're multiple ways it could happen and be impactful.
