I don't think it is going to be a 1 vs 1 from the beginning. Marco is probably going to have a little skirmish with King, Perospero still wants his revenge on him, Who's Who is a wild card, Black Maria might turn into an ally and Killer might have been captured by Black Maria. Anyone of them (except for Marco) would be a perfect partner for Sanji in a 2 vs 1: strong enough to help him, but weak or just unimportant enough to be defeated and be put aside at some point.
The RS is fire resistant so King's fire would be less dangerous for Sanjj. The contrary is true too, but it's what makes things more interesting.
The cape is a shield, a perfect way to counter a sword.
You are right, Sanji has no on panel 1 vs 1 but he has a lot of good feats during the post TS. It was Oda's mistake to not let him fight at least against Daifuku or Oven, now it's too late. Queen and King are equals or at the very least really close, Sanji vs Queen would be the same.
Sanji vs King would be somewhat similar to Luffy vs Katakuri, just shorter and with some help instead of Brulee. King really seems to be Sanji's Katakuri
